1/2 c. butter
5 tbsp. cocoa
1 egg
1 c. cocunut
1/4 c. white sugar
1 tsp. vanilla
2 c. graham wafer crumbs
1/2 c. chopped walnuts (use FRESH out of the shell nuts!)
Filling:
1/4 c. butter
3 tbsp. milk
2 tbsp. vanilla custard powder
2 c. icing sugar
Melt butter; add sugar, vanilla, cocoa and slightly beaten egg in
double boiler. Stir well until mixture resembles custard.
Combine wafer crumbs, nuts, coconut well and add to mixture.
Pack in 9 inch pan. Cool in refrigerator.
Mix filling (double the
recipe for thicker filling) - butter, powder, icing sugar and milk.
Spread on cooled chocolate bottom and set for 15 minutes.
Melt 4 squares of semi-sweet chocolate with 1 tablespoon of butter.
Spread over custard icing. Cut into squares.
Variation: For a more
chocolately taste, add 1 cup Oreo cookie crumbs and 1 cup graham
crumbs to base.
